Today I'm making Matoke , a traditional Meru dish enjoyed both as an everyday home meal and during special occasions and ceremonies. There are specific varieties of green bananas used to make matoke because not every type of banana gives the same texture and taste when cooked. Ingredients Green bananas Potatoes Meat Onions Cooking oil Salt, to taste Water Recipe 1. Peel the green bananas and cut them into halves. Peel and cut the potatoes as well, then set them aside. 2. Heat cooking oil in a large pot over medium heat. 3. Add the chopped onions and fry until soft and lightly golden. 4. Add the meat and cook it together with the onions until the meat is fully cooked and nicely browned. 5. Add the green bananas and potatoes to the pot, then season with salt. 6. Pour in enough water to cover the ingredients. Cover the pot and cook until the bananas and potatoes are tender. 7. Once everything is cooked, drain the excess water. 8. Mash everything together, then add all the drained water back into the pot. The excess water contains all the delicious flavors from the meat, onions, bananas, and potatoes, so make sure to put all of it back. Combine everything well. You can leave the mixture slightly chunky or mash it until smooth, depending on your preference. 9. Serve hot and enjoy this delicious traditional Meru meal with your family.
