SWEET POTATO PIE - BARBADOS STYLE

This here is our spin on the heavy but very tasty Barbadian/Bajan styled sweet potato pineapple pie or casserole. Lightened up with soy milk but you can do low fat or skim and your choice of butter or butter substitute this casserole will make for a delicious and guilt free center to the table. You can also decorate inside the pineapple slices with Maraschino Cherries for that extra bit of color
