Hilsa (Ilish) is known for its rich taste and tender texture, and this authentic preparation brings out the absolute best flavor in every single bite. 📌 *Ingredients:* Fresh Hilsa Fish: 500g (cut into steaks) Yellow & Black Mustard Seeds: 2 tablespoons (ground into a paste) Mustard Oil: 3-4 tablespoons Green Chilies: 4-5 (slitted) Turmeric Powder: 1 teaspoon Red Chili Powder: 1/2 teaspoon Nigella Seeds (Kalonji): 1/2 teaspoon Salt: to taste 📌 *Instructions:* 1. Clean and wash the Hilsa fish pieces carefully. Marinate them with a pinch of turmeric powder and salt. 2. Prepare a smooth paste using mustard seeds, a green chili, and a pinch of salt with a little water. 3. Heat mustard oil in a pan until it reaches smoking point, then lower the heat. 4. Add nigella seeds and slitted green chilies to temper the oil. 5. Mix the mustard paste, turmeric powder, red chili powder, and water, then pour it into the pan. 6. Gently place the marinated fish pieces into the simmering gravy. 7. Cover and cook on low-medium heat for 8–10 minutes until the fish is tender and the oil separates on top. 8.
