It is not an invention. It is an assembly — made by the poorest people in the richest city
in Europe, out of what was left.
For six hundred years, a flatbread sat on the streets of Naples with nothing on it. Oil, salt,
garlic — and that was all. Then came a fruit that Europe refused to eat for two centuries
because it looked like poison. A tomato that the rich threw away became the taste that the
world would recognise above all others.
This is the story of pizza. Not a chef, not a king, not a genius. A dough that took ninety
seconds in a fire. A court that dressed it in a flag. Peasants who carried it across an ocean.
A tenement district that stopped separating itself from it. A basement with a licence on the
wall. And then the world.
The pizza spent two thousand years being poor, and it grew like a weed.

A note on the sources: The etymology of pizza is genuinely disputed — no single origin is
proven, and the confident versions you read online are individual scholars' preferences.
The 997 Gaeta document is real and is the first written use of the word. The story of
Margherita and the Queen is partly tradition, partly documented — the letter and Esposito
both exist in the record, but the Queen's boredom and the invention of the combination are
the story, not the fact. The anti-Italian sentiment of the early 20th century is a matter
of record in the American press. Gennaro Lombardi's 1905 licence is a bureaucratic fact,
not the date pizza arrived in America — there were Neapolitan ovens in New York for years
before him.
What you are watching is history told honestly.
