Going through the motions R&B Mix at Lakay Kusina | INTROSPKT | MASA Radio 001

Behind a plain storefront, sits a small kitchen built to feel like home. Lakay is an Ilocano word for the elder of the house, the old man whose table everyone gathers around. Step inside and the city disappears: a bamboo bahay kubo canopy over the counter, sari-sari chips hanging from clips, a rotary phone, an old tube TV, and woven baskets on every shelf. It is a corner of the province rebuilt in Toronto's St. Jamestown. Lakay Kusina began as Kuya Willie's Kainan, and the family behind it never changed what mattered. The boodle fight is still served kamayan style on banana leaves, with grilled pork belly, fish, lumpia, and garlic rice eaten by hand. Sinigang and halo-halo remain the staff favourites. Toronto holds the largest Filipino communities in Canada, and rooms like this are where that community actually lives, between the lunch rush and the family dinners.
