In this film, I spend a day inside Margaret’s Hope Tea Estate in Darjeeling, following tea from the growing bush in the field to the professional tasting table inside the factory. We begin in the garden with pruning, new growth, internode length, leaf size, Chinary bushes and clonal cultivars. These small details help explain why Darjeeling can change so dramatically as the season moves from first flush toward second flush. We also look at how Margaret’s Hope is divided into different divisions and sections, including Dilaram, Maharani and Sepoy Dhura, and visit the area described at the estate as its premium Muscatel section. Inside the factory tasting room, the differences seen in the field begin to appear in the cup. We compare first flush and early second-flush teas side by side, including White Tea, Moonlight, Tippy Clonal, China-type teas, AV2 and P312. We examine how the infused leaf shifts from green toward coppery tones and how cultivar, season and manufacture can completely change the character of a tea. The factory manager also explains the professional tasting process, from the dry appearance of the leaf to the infusion and finally the liquor. We discuss tasting Darjeeling warm and cold, how the tea changes as it rests, and why professional tasters slurp so forcefully to aerate the liquor and spread it across the mouth. We also taste Dryer Mouth tea, sampled directly from production before cleaning and sorting, giving a look at how quality is checked immediately after manufacture. Later, we go deeper into how the factory manages small production lots known as Ghani. Individual batches and teas from different sections are received and tasted separately, and only blended when they are considered compatible. Some teas in this tasting had been made weeks earlier, while others had been manufactured that very morning. That gave us a rare opportunity to compare different stages of the season in real time, from the delicate character of first flush to teas beginning to develop the greater body and strength associated with second flush. For me, this is one of the most complete films from the entire Darjeeling journey. It is not only about tasting tea. It is about understanding how a Darjeeling tea acquires its identity through the bush, cultivar, season, section, manufacture, individual batch and finally the judgment of the people who taste it.
