European Saw What Americans Put in a BBQ Smoker – "My Entire Kitchen Fits Inside That" 🥩💨🇺🇸🇳🇱 (Texas BBQ Awakening)
Pieter Vandermeer is a veteran kitchen contractor from Rotterdam who has spent decades designing and installing over 400 ultra-efficient kitchens across the Netherlands and Belgium. In European urban design, elegance means ruthless compression: fitting an entire culinary workspace into 60 square meters with zero wasted space. To Pieter, cooking on a massive scale was simply an American habit of unnecessary excess.
Then he pulled into a driveway in central Texas and saw what was parked beside the garage.
A custom offset smoker built from quarter-inch steel by a retired structural engineer: 8 feet tall, 12 feet long, weighing nearly a ton. Its firebox alone was the size of a standard European oven, and its main cooking chamber had a larger footprint than Pieter’s own kitchen floor.
When the heavy steel doors opened to reveal 12 hours of low-and-slow post oak magic—full packer briskets, racks of collagen-rendered ribs, and bronze-skinned chickens—every Scandinavian and Dutch design rule in the group collapsed.
In this video, follow four European builders and architects as they discover why authentic Texas BBQ cannot be compressed: why a one-ton steel beast isn't vulgar excess, but the exact physics required to master thin blue smoke, maintain thermal mass, and produce the legendary Texas smoke ring.
