I'm about to dump a regular old tub of yogurt into my Panasonic bread maker. The weird part? The same ingredient is supposed to help make both a moist rye loaf and a batch of fluffy buns. That sounds a little suspicious... so let's find out if it actually works.

Yogurt Buns
Soft, fluffy Japanese-style yogurt buns with a slight tang and rich buttery texture.
Makes
10 buns
Approximate Total Time
Bread machine dough cycle: 1 hour
Resting time: 10 minutes
Final rise: 40–60 minutes
Baking time: 10–15 minutes
Total Time: About 2 hours 15 minutes to 2 hours 30 minutesPreset Menu: “d3”
Ingredients
Dough
280 g bread flour (about 2 1/4 cups)
15 g butter (1 tbsp)
17 g sugar (1 tbsp + 1 tsp)
5 g salt (1 tsp)
150 g plain yogurt (10 tbsp)
70 g milk (4 tbsp + 2 tsp)
2.8 g dry yeast (1 tsp)
Finish
25 g beaten egg (about 1/2 egg) for egg wash
Instructions
Make the Dough
1. Insert the kneading blade into the bread pan.
2. Add all dough ingredients into the bread pan in the listed order.
3. Place the dry yeast into the yeast dispenser.
4. Start preset menu “d3.”
Shape the Buns
1. Remove the dough and divide into 10 equal pieces (about 50 g each).
2. Roll each piece into a smooth ball.
3. Cover with a cloth and let rest for 10 minutes.
4. Arrange the dough balls side by side on a parchment-lined tray.
5. Make 4 small cuts around the sides of each bun.
6. Lightly spray the dough with water.
Final Rise
Let rise at 30–35°C (86–95°F) for 40–60 minutes, or until doubled in size.
Bake
Oven Method
1. Preheat oven to 180–200°C (355–390°F).
2. Brush tops with egg wash.
3. Bake for about 15 minutes, or until golden brown.
Air Fryer Bake Function (Cosori 9-in-1 TurboBlaze)
1. Preheat air fryer on Bake at 175°C (350°F) for 4 minutes.
2. Brush tops with egg wash.
3. Bake at 175°C (350°F) for 10–13 minutes until golden brown.
Air Fryer Tips
Bake in batches if needed.
If tops brown too quickly, loosely cover with foil near the end.
Cooking time may vary slightly depending on spacing and bun size.

Rye Bread

Ingredients
125 g bread flour (about 1 cup + 1 tbsp)
125 g rye flour (about 1 cup + 2 tbsp)
5 g butter (about 1 tbsp)
17 g sugar (about 1 tbsp + 1 tsp)
5 g salt (about ¾ tsp)
85 g plain yogurt (about 5 tbsp + 2 tsp)
80 g water (about 5 tbsp + 1 tsp)
1.4 g (½ tsp) dry yeast
Instructions
Make the Dough
1. Insert the kneading blade into the bread pan.
2. Add all dough ingredients into the bread pan in the listed order.
3. Place the dry yeast into the yeast dispenser.
4. Start preset menu “12.”
5. When finished, let the loaf rest in the pan for 2 minutes, then remove it and cool on a wire rack.
