Homemade Cheesecake :
Ingredients
For the crust:
• 65 g butter, softened
• 15 g sugar
• ½ beaten egg
• 1 egg yolk
• 125 g all-purpose flour
• ½ tsp baking powder
For the cheesecake filling:
• 500 g quark (curd cheese)
• 3 egg yolks
• 125 g sugar
• 40 g unsweetened vanilla custard powder
• 325 ml milk
• 60 g vegetable oil
Instructions
1. Preheat your oven to 350°F (180°C). Line the bottom of a 9-inch (22 cm) springform pan with parchment paper.
2. Prepare the crust: Combine the butter, sugar, beaten egg, egg yolk, flour, and baking powder. Mix until a soft dough forms. Roll out the dough on a lightly floured surface and press it evenly into the bottom of the prepared pan.
3. Make the cheesecake filling: Separate the 3 eggs. Set the whites aside for the meringue. Blend the egg yolks, quark, sugar, custard powder, milk, and vegetable oil until smooth. The filling will be quite liquid.
4. Pour the filling over the crust and bake for approximately 50 minutes.
5. Let the cheesecake cool for at least 2 hours before slicing. As it cools, beautiful golden dewdrops may appear on the meringue.
