🥘 Ingredients
For marinating the mutton
3 kg mutton, washed and drained
1 bunch fresh coriander leaves
10 green chillies (adjust to taste)
3 garlic pods
1-inch piece ginger
½ kg curd
1 tsp turmeric powder
1–2 tbsp ginger-garlic paste or additional garlic, if needed
Salt to taste
For the roasted masala
2 cups freshly grated coconut
5 large onions, roughly chopped
3 large tomatoes, chopped
2–3 tbsp coriander seeds
1–2 tbsp black peppercorns
1 tsp cloves
50 dried red chillies
1–2 cinnamon sticks
3–4 cloves nutmeg
Javitri
1 star anise (optional)
For cooking
3–4 tbsp oil
Water as required
Salt to taste
Fresh coriander leaves for garnish
For rice roti
Rice flour
Hot water
Salt to taste
👩🍳 Method
Step 1: Prepare the green masala
Grind the green chillies, garlic, ginger and fresh coriander into a smooth paste, adding a little water if required.
Step 2: Marinate the mutton
Combine the mutton with the green masala, curd, turmeric powder and salt. Mix thoroughly and allow it to marinate for at least 30 minutes.
Step 3: Roast the spices
Dry-roast the coriander seeds, peppercorns, cumin seeds, dried red chillies, cinnamon, cloves, cardamom and star anise until aromatic.
Step 4: Prepare the coconut masala
In a pan, roast the grated coconut with some sliced onion until golden brown. Allow it to cool, then grind it with the roasted spices and enough water to make a smooth, thick masala paste.
Step 5: Cook the onions and tomatoes
Heat oil in a pressure cooker or heavy-bottomed pot. Add the remaining chopped onions and sauté until golden. Add the tomatoes and cook until soft and the oil begins to separate.
Step 6: Cook the marinated mutton
Add the marinated mutton to the onion-tomato mixture. Cook for several minutes, stirring well so the masala coats the meat.
Step 7: Add the roasted masala
Add the prepared coconut-spice paste and mix thoroughly. Add water as required and adjust the salt.
Step 8: Simmer until tender
Pressure-cook until the mutton is tender, following your cooker’s instructions, or simmer in a covered pot until fully cooked. Adjust the gravy consistency and simmer briefly to bring all the flavours together.
Step 9: Prepare the rice roti
Mix rice flour with salt and hot water to form a soft dough. Shape into thin rotis and cook on a hot tawa until done.
Step 10: Serve
Garnish the mutton curry with fresh coriander leaves. Serve hot with rice roti, sliced onions and green chillies.
🍽️ Serving Suggestion
Serve the mutton masala in a traditional bowl on a wooden platter with freshly made rice roti, onion rings, green chillies and lemon wedges. Garnish with coriander for a beautiful, rustic presentation.
