Bakery Style Chocolate Cream Cheese Muffins (Super Moist)
Ultra-moist, rich dark chocolate muffins topped with a smooth cream cheese swirl and extra chocolate chips! These are super easy to bake at home and perfect if you love deep, bold chocolate flavors.

Ingredients
CREAM CHEESE TOPPING
• 225g cream cheese (Full-fat like Philadelphia works best!)
• 15g unsalted butter (heat in the microwave)
• 65g granulated sugar
• 1 pinch of salt
• 1 large egg (room temperature)
• 1 tsp vanilla extract
• 40g all-purpose flour (Note: If using low-fat cream cheese like I did, add an extra 38g flour, making it 78g total!)
CHOCOLATE MUFFIN BATTER
• 115g unsalted butter (hot, freshly melted)
• 65g cocoa powder
• 1 tsp instant espresso powder
• 15g vegetable or canola oil
• 200g granulated sugar (or adjust 80–160g to preference)
• 2 tsp baking powder
• ½ tsp salt
• 2 tsp vanilla extract
• 2 large eggs (room temperature)
• 180g total liquid mixture: 80g Schmand (or sour cream) whisked with 100 ml milk
• 240g all-purpose flour
• 250g semi-sweet chocolate chips (200g for batter,
• 50g reserved for topping)
Step-by-Step Instructions
1. Prep Your Oven & Pan
Preheat your oven to 220°C (425°F). Line a 12-cup muffin pan with tulip liners.
2. Make the Cream Cheese Topping
Beat together the cream cheese, softened butter, sugar, and salt until smooth.
Add the egg and vanilla extract, beating just until combined.
Whisk in 40g of flour until smooth. (If using low-fat cream cheese, whisk in the extra 38g of flour so it thickens up!).
Chill: Pop the mixture uncovered in the fridge for about 20–30 minutes while you prep the batter. This helps it hold its shape on top!
3. Bloom Cocoa & Make Batter Base
Pour hot melted butter into a large bowl. Immediately stir in the cocoa powder and espresso powder. Let it sit for 2–3 minutes to bloom the chocolate flavor.
Whisk in the oil, sugar, baking powder, salt, and vanilla extract.
Add eggs one at a time, whisking well after each.
Whisk in the Schmand and milk mixture.
4. Finish the Batter
Switch to a spatula. Add 240g flour and 200g chocolate chips.
Gently fold until the flour just disappears (do not overmix!).
5. Assemble & Bake
Scoop chocolate batter into liners until ¾ full.
Spoon 1–1.5 tbsp of chilled cream cheese topping over each muffin.
Press the reserved 50g chocolate chips on top.
Bake at 220°C (425°F) for 5 minutes, then reduce oven to 175°C (350°F).
Standard Bake Time (Full-Fat): Bake for another 15–17 minutes.
Low-Fat Rescue Bake Time: If using low-fat cream cheese + extra flour, it takes about 28–32 minutes total at 175°C.
