Today we are in Villa Castelli, in the province of Brindisi, deep in the heart of Puglia. Here, we meet 89yr old Checca—short for Francesca— who shares with us her recipe for maritati pasta with cime di rapa. The name “maritati” literally means “married” in Italian, and it combines two traditional pasta shapes: Orecchiette and Maccheroni. Traditionally, these two types of pasta were “married” together in one dish, hence the name. Here’s her recipe:
For the dough:
300g durum wheat semolina flour
150ml water
For the condimento:
1 clove garlic
2–3 salted anchovies, cleaned and chopped
1 tablespoon capers, rinsed
1 small piece of chili pepper
10 cherry tomatoes, halved
Extra virgin olive oil
500g turnip greens leaves (cime di rapa), cleaned and trimmed
