Hi, I'm Himari 🌼
I'm a Japanese nurse living in Japan 🇯🇵
At work, I spend all day taking care of other people. So this channel is the other half of my day: coming home, cooking something, and taking care of myself for once.
Nothing special happens here. I think that's the good part.
If you're someone who always puts yourself last, I hope this can be a place to sit down for a while.
Lunch was a cheeseburger Happy Set at McDonald's on my own, then a cloudy walk home 🍔
That night I used up the last of my summer somen in a new way, with garlic miso meat and my homegrown shiso and tomatoes.
🍜 Cooking starts at 7:53

▶ RECIPE

🍜 Somen with Miso Ground Meat (Niku Miso Somen)
Ingredients (1 serving)
・Somen noodles — 1 bundle (50 g)
・Ground meat (pork or any kind) — about 100 g
・Garlic — 1 clove, finely chopped
・Shiso (perilla) leaves — 3, cut into thin strips (or 1/4 cucumber, julienned)
・Long green onion — a little, finely chopped (optional)
・Cooking oil — a little
・Cooking sake — 1 tbsp
・Sugar — 2 tsp
・Miso — 1 tbsp
・Doubanjiang (Chinese chili bean paste) — 1/2 tsp (optional, but recommended for a little heat)
・Water — 50 ml
・Cherry tomatoes — 3, cut into wedges (optional)
・Boiled egg — 1, cut in half (optional)
Instructions
① Finely chop the garlic (and the green onion, if using). Cut the shiso into thin strips, or julienne the cucumber.
② In a small bowl, mix the sake, sugar, miso, water, and the doubanjiang if using. In the video I added them straight to the pan, but mixing them first helps the miso blend in evenly, so I'd recommend it.
③ Put the oil and garlic in a pan and heat until fragrant. Add the ground meat and cook over medium heat until it's no longer pink. If using green onion, add it now and cook until soft.
④ Pour in the miso mixture and cook, stirring, until most of the liquid has cooked off.
⑤ Boil the somen for the time on the package. Cool in ice water and drain well.
⑥ Put the noodles in a bowl and top with the shiso (or cucumber) and the miso meat. Add the tomatoes and egg if you like.

If you try it, I'd love to hear how it went.
