How to Make Roasted San Marzano Tomato Sauce at Home - "Doing Tomatoes" in My Condo

Doing tomatoes looks a little bit different for me this year. My family is not doing them the traditional way (with industrial sized equipment, in my Nonna's garage) so instead I'm scaling back and processing a quarter bushel in my condo kitchen. This roasted San Marzano sauce is jammy, sweet, thick, rich, and so easy! I picked up my tomatoes at a farm just outside Toronto. If they are not available where you live, try roma or plum tomatoes.
