Pasta with Beans using Solfi beans from Marche

One of my favourite dishes this week: pasta e fagioli! I love beans, so I couldn’t resist buying some from Enrico, who lives near my home in Marche. He’s one of the few producers still growing the ancient Solfi bean, a local variety prized for its delicate skin, intense flavour and creamy texture.
