Blueberry Cheesecake Ice Cream Recipe
Step 1: Make the Blueberry Sauce
Let’s start by making our fresh blueberry sauce, it’s the star of this recipe!
Heat a pan over medium heat and add 1 cup of fresh or frozen blueberries.
Add 4 tablespoons of sugar and stir well to combine.
I’m also adding another 1 and a half tablespoons of sugar to bring out that extra sweetness, then give it a good mix.
Squeeze in half a lemon and stir again.
Cook for about 5 to 7 minutes until the berries break down and the sauce thickens slightly.
Stir occasionally to prevent sticking and press the berries gently to help them cook down.
Once you’ve got a nice syrupy consistency, turn off the heat and let the sauce cool completely.
Step 2: Make the Ice Cream Base
Now it’s time to whip up that creamy cheesecake base.
Take 150 grams of softened cream cheese and add it to a bowl.
Blend until it’s smooth and creamy.
Add a quarter cup of sweetened condensed milk, you can adjust the sweetness as you like and blend with the cream cheese for about a minute.
Now add 1 cup of chilled heavy cream and 1 teaspoon of vanilla essence.
Blend everything well until the mixture becomes thick and creamy.
Step 3: Layer & Swirl
Now let’s bring everything together.
Pour a layer of the ice cream mixture into a container, then spoon some of the blueberry sauce on top and gently swirl it in.
Repeat this layering twice until your container is full, more ice cream, more blueberry sauce and one final swirl on top for that perfect burst of flavor in every bite.
Step 4: Freeze
Cover the container with cling wrap, pressing it gently against the surface to prevent ice crystals.
Tap the container gently to release any air bubbles.
Now pop it into the freezer overnight or for at least 6 to 7 hours, until it’s firm and scoopable.
Step 5: Scoop & Serve
Take the ice cream out the next day. Let it sit for a minute or two so it’s easier to scoop.
Remove the cling wrap and scoop it into your favorite bowl or glass.
To give it that perfect summer vibe, top with an edible flower or just pour some extra blueberry sauce over the top.
And that’s it..
Your delicious homemade Blueberry Cheesecake Ice Cream is ready to enjoy!
