Creamy Italian Mushroom Chicken I Make Every Week! It Never Fails
You cut into the chicken and the middle is pale, so back it goes for two more minutes, then two more, until it lands on the plate a dry, flat slab. Beside it, the mushrooms have let go of a cup of gray liquid and are boiling instead of browning. 🍗
It was never your cooking. The cut, the crowded pan and one old habit at your table did it.
One pan, and the few Italian moves that make it golden, juicy and creamy.
Marco Ferretti spent twenty-five years in restaurant kitchens, from Florence to New York. Everything worth knowing he learned earlier, in his nonna's farmhouse kitchen in Tuscany. Here he shows you how Italians actually cook at home, with the cheap, ordinary ingredients your supermarket already sells.
Marco walks you through ten steps for chicken and mushrooms in one skillet, in the order your hands take them. You'll see why the chicken has to get thinner before it gets hotter. You'll see why the salt goes on ten minutes early. And you'll see how a small handful of something from the back of your pantry does what a whole extra carton of fresh mushrooms can't. Number one is the argument at your table: the way your mother checks whether chicken is done is what has been drying yours out for years.
Stay for the rescue when a cutlet still goes stiff, what this pan costs next to a jar of ready-made sauce, and a Sunday plan that carries the week.
One of the ten comes early and it isn't the one you'd guess, so don't skip ahead.

⚠️ Kitchen safety: Chicken is safe at an internal temperature of 165°F (74°C), measured with a thermometer in the thickest part of the cutlet, not by cutting it open. If anyone at your table is pregnant, very young, elderly or unwell, keep to that guidance without exception. Never rinse raw chicken in the sink, use a separate board for it, and wash your hands with soap afterward. Keep your face back from the pan, because hot fat spits. Some alcohol stays in the wine, so for children or anyone who doesn't drink, use chicken broth with a small spoon of white wine vinegar instead. Refrigerate leftovers within 2 hours in a shallow container, eat them within 3-4 days, and reheat until steaming hot, 165°F (74°C). Prices mentioned are rough estimates that vary by region and store.
