Yat Peeg Ghai (ຍັດປີກໄກ່) is stuffed chicken wings. Some people call them "angel wings." This dish involves removing the meat and bones from part of the chicken wings to create a pocket for stuffing. The removed chicken meat is chopped up, mixed with other ingredients, and stuffed back into the skin of the wings. A lot of preparation time is required to make these wings, but they are well worth it. The part where I show how to remove the meat and bones is in the first "BONUS VIDEO" section.
