Navratri fasting ka matlab sirf fried snacks ya din bhar bhookhe rehna nahi hai! Fasting can be deeply nourishing and energizing agar aap sahi ingredients ko smart tareeqe se combine karein. In this video, we are breaking down a complete, balanced Navratri Vrat Ki Thali that keeps your digestion light, sustained energy levels high for pooja and garba nights, and hits all the right macronutrients without breaking any traditional fasting rules. From velvety tomato-based paneer to crispy vadas and a naturally caramelized warm dessert, here is how you make fasting food feel luxurious yet clean. Reinvent your 9-day fasting routine with clean cooking techniques that respect both the ritual and your body! 1. Vrat wale Paneer ki sabzi Paneer - 250 gm Ghee – 2 Tsp Cumin seeds – 1/2 tsp Ginger – 1/2 inch Green chilli - 1 Tomatoes - 4-5 Rock Salt to taste Freshly chopped coriander leaves for garnish Method Boil the tomatoes. Once done, peel the skin& roughly chop them. Using mortar & pestle, pound the ginger and green chilli( can may simply chop them too) Heat ghee in a pan, then add the cumin seeds. Allow them to crackle. Then add the ginger & chili paste and sauté for a minute or so. Add the tomatoes & cook till soft and mushy( cover after a while) Season with salt and water if needed. Remember It should be Lathpath not a curry 😉😅 Once done, add the paneer. Garnish with fresh coriander leaves & serve hot with singhade ke aate ka paratha( recipe of that has been separately shared ❤️) 2. Singhade Ke Aate Ka Paratha Ingredients 1/2 cup Singhade ka aata ( Chestnut flour ) 1 Boiled potato 1 tsp for the dough Peanut oil ( and more for making the paratha ) Sendha salt ( Rock salt ) to taste 1 Green chili ( finely chopped ) 1 tsp Freshly chopped coriander leaves Water as required to make a soft & pliable dough Method In a bowl, add flour, salt to taste, peanut oil, green chili , coriander & mashed aloo and mix well. Knead a soft dough using some water. Once ready, take a small dough ball, and roll it into a paratha. On a hot tawa, place the paratha. Cook till golden brown on both sides using peanut oil. Serve hot with paneer ki sabzi. 3. Sabudana Vada Ingredients 1/2 cup Sabudana 1Boiled potato (cut into cubes) 1/4 cup Raw peanuts(without skin) Sendha Namak (to taste) 1 tsp Jeera(cumin seeds) Finely chopped Green chilies (as per taste) 1 Tbsp Finely chopped coriander leaves Method Soak 1/4 th cup of sabudana in hot water for about 20 mins. Drain and dry completely with the help of a kitchen towel. In a bowl, add the sabudana, followed by potatoes. You may to Now crush the peanuts and add in the bowl along , with salt, cumin seeds, chopped green chilies & coriander leaves. Mix well. Make small roundels and deep fry. Remove on an absorbent paper and serve hot with chutney of choice. (I’ve mixed some fresh coriander chutney and curd) 4. Kheere Ki Sabzi Ingredients 2-3 Cucumbers (kheera) - diced into medium sized pieces 1 tsp Oil Rock salt to taste 1/2 tsp or as per taste Red chili powder Green chillis (finely chopped) - as per taste Method In a pan, heat the oil and add the slit green chillies. Then add the cucumber pieces. Add salt and red chilli powder and gently cook for a few minutes. It should remain slightly crunchy. Take it out in a serving dish & serve hot or warm. 5. Thali ka Meetha Ingredients 1 Sliced Bananas 2-3 Cardamom pods ( Elaichi ) 2 Tsps. Raw Sugar 5-6 Walnuts ( Cut into 2 ) 1 Tbsp Ghee Method In a pan, add Ghee. Once hot, add the Cardamom Pods & sauté till fragrant. Add sliced bananas and allow them to get caramelized. Add sugar and walnuts and give everything a mix till it resembles a nice gooey halwa.
