Let it rest for 15 minutes until frothy. For the dough, mix flour, milk powder, baking powder, salt, curd, and oil. Add the activated yeast water and knead into a soft dough. Grease lightly, cover, and let it rise for 1 hour or until doubled. Punch it down, divide into four portions, and roll into mini naans. Cook on a hot tawa over medium heat till lightly golden. For the filling, heat 1 tsp oil, sauté onion and ginger-garlic paste till translucent. Add chicken, cook 1 to 2 minutes till white. Add green chilli, red chilli powder, coriander powder, chilli flakes, and salt. Cover and cook on low for 10 minutes. Stir in Schezwan sauce and mayonnaise, add bell peppers, then cheese slices. Cover till the cheese melts. To assemble, cut each mini naan, add lettuce or cabbage leaf, 1 to 2 tbsp of filling, drizzle chipotle sauce, fold gently, and serve hot.
