JAC Tradilevain Liquid Sourdough Fermenter 👉🔗: https://erikarecord.com/equipment/jac... How to feed (refresh) a mother sourdough in the JAC Tradilevain, the automated liquid sourdough fermenter for commercial bakeries: add flour, add at least the same amount of 45 °C (113 °F) water, close the lid and start the cycle. The Tradilevain then mixes, ferments and cools the starter to storage temperature automatically. Use the same mother sourdough, flour and water ratios every time you refresh. JAC's example for the TL40: 26.4 lb mother sourdough, 44 lb flour, 44 lb hot water. Settings shown in this demo: fermentation at 31 °C (88 °F), storage at 13 °C (55 °F).
