Beta, your basmati comes out a sticky, broken lump because of one mistake made BEFORE the heat - you didn't wash the glue off. Here are 7 old tricks for long, separate, perfumed grains every time, the way my father's mother served them - no machine, no pouch. Get my father's whole kitchen - Nenek's Indian Kitchen: https://payhip.com/NenekSari My mother's Indonesian kitchen too:    / @cooktheindonesianway   THE 7 TRICKS (written out so you can keep them) - 1. RINSE until the water runs clear. The loose surface starch is glue - swirl and pour off 3-4 times. This one step is the difference between a lump and separate grains. 2. SOAK 20-30 min. A soaked grain cooks evenly and stretches to its full long length instead of breaking short and mushy. That's the restaurant grain. 3. Don't drown it. Absorption ~1 rice : 1.5 water (basmati drinks less) - OR cook it like PASTA in plenty of salted water and drain when just tender. You can't over-water rice you drain. 4. Don't STIR, keep the LID ON. Stirring breaks the grain and releases glue; peeking lets the steam out. One gentle settle, then leave it. 5. REST 10 min off the heat, lid on, before you touch it. The grains finish and firm up. Served instantly it's not done - only hot. 6. FLUFF with a FORK, never a spoon (a spoon crushes to paste). Salt the cooking water, don't stir it in after. 7. Then perfume it: jeera rice (cumin tadka), pulao (bay/cardamom/clove), a drop of ghee or lemon for whiter grains. Cook extra - cold rice fries loose tomorrow. Safety: don't leave cooked rice sitting out warm for hours (it grows bacteria reheating won't fix). Cool it and fridge within the hour; reheat piping hot.
