Lasagna soup — one pot lasagna soup — is the weeknight miracle Italian mammas make when there is no time for layers. All the flavor of lasagna in 40 minutes: rich tomato meat sauce, broken lasagna sheets cooked right IN the soup, melted mozzarella, and a cool creamy ricotta dollop on top. No layering. No baking dish. One pot to wash.
In this video, Mamma Elena shows you:
Why most lasagna soup turns mushy, thin, or loses its ricotta
Trick 1: brown and build everything in the SAME pot — the brown bits are the flavor
Trick 2: break the sheets by hand and cook them IN the soup, 8 to 10 minutes, never drained
Trick 3: ricotta dollop on TOP at serving, never stirred in — creamy and distinct
The serve: warm bowl, mozzarella ribbons, parmesan snow, crusty bread
Bonus: it reheats even better the next day, and freezes in jars for tired weeks
Make it this week, on a tired night, for people you love. Then come back and write one word in the comments: RICOTTA.
