Culinary Journey: Authentic Village Cooking in Western Nepal
Join us in our rustic kitchen as Mom prepares a traditional Nepali meal featuring:
Dhido (ढिडो): A wholesome staple made from buckwheat or millet flour, cooked to a smooth, dough-like consistency.
Sisno (सिस्नो): A nutritious curry made from stingy nettle leaves, rich in vitamins and minerals.
Golveda ko Achar (गोलभेडा को अचार): A spicy and tangy tomato pickle that perfectly complements Nepali dishes.
In this video, Mom demonstrates how to prepare Golveda ko Achar:
Ingredients:
4 ripe tomatoes
2 tablespoons sesame seeds, toasted
2-3 green chilies
1 clove garlic
1 teaspoon cumin seeds
1 tablespoon fresh cilantro, chopped
1 teaspoon lemon juice
Salt to taste
1 teaspoon mustard oil (optional, for authentic flavor)
Instructions:
1. Roast the Tomatoes: Traditionally, tomatoes are roasted over an open flame until the skin chars and the flesh softens. Alternatively, you can grill or pan-roast them. Once roasted, let them cool, then peel off the charred skin.
2. Toast Sesame Seeds: In a dry pan over medium heat, toast the sesame seeds until they turn golden brown and release a nutty aroma. Remove from heat and let them cool.
3. Prepare the Spice Mixture: Using a mortar and pestle or a blender, grind the toasted sesame seeds, cumin seeds, garlic, and green chilies into a coarse paste.
4. Combine Ingredients: In a bowl, mash the roasted tomatoes, then mix in the spice paste. Add chopped cilantro, lemon juice, salt, and mustard oil (if using). Stir well to combine all flavors.
This Golveda ko Achar adds a burst of flavor to the meal, enhancing the earthy taste of Dhido and the wholesome goodness of Sisno.
