درك اين قصه كه در قديم یک کاسه‌ى آش، حاصل چند روز کار بود تا تبديل به خوراك شود كار سختى‌ست. اصلا همین، خوراك را خوراك ميكرد.خانه را خانه ميكرد. آدم را افسرده نميكرد شاید فلسفه‌ی زندگی آن‌ها، در حرکت دست‌هایشان بود. اینکه بودن، لزوماً به فهمیدن نیاز ندارد گاهی فقط بايد انجام داد. اینکه معنا، همیشه محصول تأمل نیست،گاهی محصول کاریست که با صبر انجام دادیم. ----- مواد لازم برای حدود ۱.۵ کیلو خمیر: آرد گندم: ۱ کیلو نمک: ۲۰ گرم آب جوشیده‌شده: حدود ۴۵۰ میلی‌لیتر ⚠️ آب را یک‌جا اضافه نکنید ممکن است همه‌ی آن لازم نباشد. آرد را الک کنید. نمک را داخل آب جوش حل کنید و آب را کم‌کم به آرد اضافه کنید و هم بزنید. وقتی خمیر جمع شد، حدود ۱۰ تا ۱۵ دقیقه خوب ورز بدهید. خمیر باید سفت و نسبتاً خشک باشد، نه مثل خمیر نان نرم. چونه کنید، داخل کیسه بگذارید و ۳۰ دقیقه استراحت بدهید. هر چونه را با وردنه باز کنید تا حدود ۱ میلی‌متر ضخامت داشته باشد. از دو طرف، طبق تصویر، ورقه را روی هم تا کنید و بین لایه‌ها آرد بپاشید تا رشته‌ها به هم نچسبند. بعد با یک چاقوی تیز شروع به برش زدن کنید. بین رشته‌های بریده‌شده هم کمی آرد بپاشید تا به هم نچسبند. رشته‌ها را در جایی که هوا جریان داشته باشد و آفتاب مستقیم و زیاد نباشد آویزان کنید تا کاملاً خشک شوند. اگر رشته‌ها کاملاً خشک شده باشند، می‌توانید آن‌ها را در یک ظرف دربسته، بیرون از یخچال نگهداری کنید و بهتر است حداکثر تا سه ماه مصرف شوند. نوش جان 🤍 #رشته #رشته_خانگی #آش_رشته #آشپزی_ایرانی #غذای_ایرانی #غذای_سنتی #آشپزی_سنتی #فرهنگ_غذایی #میراث_غذایی #قصه_های_ایران It is hard for us today to understand that, once upon a time, a single bowl of Ash could be the result of several days of work before it finally became food. Homemade Reshteh Ingredients — makes approximately 1.5 kg of dough: • 1 kg wheat flour • 20 g salt • Approximately 450 ml boiled water ⚠️ Do not add all the water at once. You may not need all of it. Sift the flour. Dissolve the salt in the boiled water, then gradually add the water to the flour while mixing. Once the dough comes together, knead it well for about 10–15 minutes. The dough should be firm and relatively dry, not soft like bread dough. Divide the dough into portions, shape them into balls, place them in a bag, and let them rest for 30 minutes. Roll each portion out with a rolling pin until it is approximately 1 mm thick. Fold the sheet over itself from both sides, as shown in the video, sprinkling flour between the layers so they do not stick together. Then, using a sharp knife, begin cutting the folded dough into thin strands. Sprinkle a little more flour between the cut strands to prevent them from sticking together. Hang the Reshteh somewhere with good airflow, away from strong direct sunlight, and allow it to dry completely. Once the Reshteh is completely dry, you can store it in an airtight container outside the refrigerator. For the best quality, it is recommended to use it within three months. Enjoy. 🤍
