بادمجان خشک در خمره یا کلوک با موسیر به روش خیلی قدیمی مواد لازم: ۲ کیلو بادمجان قلمی ۳۰۰ گرم موسیر تازه خردشده سرکه انگور (به مقدار لازم) شیره‌ی خرما بسته به ذائقه(۵ تا ۶ ق‌غ‌خ) ۱ قاشق غذاخوری زردچوبه ۱ قاشق غذاخوری تخم گشنیز ۲ قاشق غذاخوری سیاه‌دانه فلفل قرمز و نمک به مقدار لازم طرز تهیه: بادمجان‌ها را بشویید و از چهار طرف برش بزنید، طوری که قسمت انتهایی آن‌ها جدا نشود. ۳ تا ۴ دقیقه در آب جوش نمک‌دار بجوشانید، سپس آبکش کنید و حدود دو روز در هوای آزاد بگذارید یا اویزون به بند کنید تا خشک شود. اگر از خمره سفالی استفاده می‌کنید، بهتر است قبل از مصرف دو روز، داخل آن آب بریزید و بذارید در حوض پر اب یا یه ظرف پراب تا آب‌بندی شود و دیگر نم پس ندهد. موسیر را با زردچوبه، تخم گشنیز، سیاه‌دانه، فلفل قرمز و نمک مخلوط کنید. داخل خمره، بادمجان، مخلوط موسیر و کمی شیره خرما را لایه‌لایه بچینید و هر لایه را کمی فشرده کنید. در پایان، سرکه را اضافه کنید تا روی مواد را کاملاً بپوشاند. خمره را در جای خنک و تاریک بگذارید. بعد از حدود یک تا دو ماه، ترشی آماده است. اگر شما هم این ترشی را به همین روش یا با رسم شهر خودتان درست می‌کنید، خوشحال می‌شوم تجربه‌تان را برای همه بنویسید. شاید هر کدام از ما، تکه‌ای از یک رسم قدیمی را به یاد دیگری بیاوریم. 🤍 Traditional Iranian Dried Eggplant Pickle in a Clay Jar with Shallots Ingredients 2 kg small, slender eggplants 300 g fresh shallots, finely chopped Grape vinegar, as needed Date syrup, to taste (about 5–6 tablespoons) 1 tablespoon turmeric 1 tablespoon coriander seeds 2 tablespoons nigella seeds Red pepper and salt, to taste Method Wash the eggplants and make four lengthwise cuts, leaving the stem end attached so that the eggplant stays whole. Bring a pot of salted water to a boil and blanch the eggplants for 3–4 minutes. Drain them well, then leave them outdoors for about two days to dry. You can also hang them on a string in the open air. If you are using a traditional clay jar (kholuk), it is best to soak and seal the jar before using it. Fill it with water and place it in a basin or pool of water for about two days. This helps seal the clay and prevents moisture from leaking through the jar. Mix the chopped shallots with turmeric, coriander seeds, nigella seeds, red pepper, and salt. Inside the clay jar, layer the dried eggplants, the seasoned shallot mixture, and a little date syrup. Gently press down each layer as you go. Finally, pour in enough grape vinegar to completely cover the ingredients. Place the jar in a cool, dark place and allow the pickle to mature. It will be ready after approximately 1–2 months.
