Zarda Recipe is a traditional Pakistani sweet rice dessert made for special occasions, weddings, Eid and family celebrations. This delicious and aromatic sweet rice dessert is colorful, flavorful and feels like a truly royal treat!

Ingredients
Rice – ½ kg (soaked in water for 2hrs) (Sahla rice)
Sugar – ½ kg
Milk – 250 ml
Ghee – 250 ml
Muraba Red – ½ bowl
Muraba green – ½ bowl
Khoya – 1 bowl
Cashews – ¼ bowl (cut in half)
Almonds – ¼ bowl (cut in pieces)
Coconut flakes – ¼ bowl (cut in pieces)
Green cardamom – 6
Cloves – 7 pieces
Gulab jamun and cham cham – ½ kg
Food color orange – ½ tsp
Food color yellow – 2 tsp
Water – 1 ½ liter
Recipe
Put a pot on high to medium flame with water to boil. Once bubbles start forming add yellow and orange food color and mix in water. Then take the soaked rice and after straining the water add it into the pot with boiling water for rice to cook in steam. Then after the rice is fully cooked take them out on a big Parratt style plate so they can cool down without breaking.
Now in another pot add ghee and let it heat up on low to medium flame. Then add cashews, almonds and coconut flakes into the pot and stir to fry. Once it’s fried take it out by straining the ghee onto a plate to use later. Now in the same pot with remaining ghee add khoya and stir to fry. Once it’s fried take it out on a plate too to use later. Now add some more ghee into the same pot and then add green cardamom and cloves and stir to cook. Then add sugar into the pot and mix to cook. Now after a while add milk into the pot and stir to mix and cook. Then add the boiled and cooked rice into the pot and mix to cook. Close the lid of the pot for a few minutes so that rice can cook in milk. Now after rice completely soaks the milk and is cooked in it open the lid and add few of the fried cashews, almonds and coconut flake you made earlier on top of it. Then add few of the fried khoya and then few of the red and green muraba as shown in the video. Mix al in rice as shown. The Zarda rice is cooked. Take them out on a plate and now garnish the remining cashews, almonds, coconut flakes and khoya on the rice fully as shown. Also add the remaining red and green muraba on the top. Also garnish with some Gulab jamuns and cham cham mithai sweets as shown to give it a royal vibe. Your yummy special Zarda is ready. Enjoy.
