Ingredients
Rice – 200 grams (a little less than 1 cup) (soaked in water for 1 hr.)
Milk (full fat) – 1600 ml (7 cups)
Sugar (white) – 12 tbs (as per taste)
Ghee – 4 to 6 tbs
Cardamom powder – 1 tsp
Kewera water – ½ tsp
Cashews – 10 – 12 pieces
Almonds – 7 to 8 (cut in half)
Coconut chunks – 2 tbs (as per your need)
Recipe
Put a pan on medium to high flame and pour in ghee to heat up. Once it’s hot add rice from which water is strained out and stir to fry until it changes color a bit. Plate this out in a bowl to use later. In the same pan add few drops of ghee and roast half cut almonds and coconut flakes and take them out in a bowl to use later. Now in another small bowl add 3 tbs of rice you fried earlier along with cashews which are cut in half. Put it aside to use later.
Now pot a cooking pot on medium to high flame. Pour in the full fat milk to get hot and then boil it. Now, once the milk is boiled and hot and cooking add the fried rice as shown and stir to mix and cook. The bubbles will start forming and it shows that they are cooking. Then on the other hand in a grinder add the rice along with half cut cashews you took out in a bowl earlier and add a little bit of milk. Grind it all together to form rice and cashews paste. Pour this out in a bowl to use later. Also stir the milk on the stove simultaneously to cook.
Then after cooking the milk with rice for a while and when you feel its becoming a little more refined in consistency add the rice and cashews you grinded in milk paste into the pot and mix to cook. Now cook for a while and then add the white sugar into the pot and mix to cook. After cooking for a while, a thick and creamy texture will be formed which shows that kheer is ready. Now slow the flame and cook on slow flame for a while. Then add cardamom powder and few roasted almonds and coconut flakes into the pot and mix to cook. Then add Kewera water into the pot and mix to cook. Stir to cook for a while on slow flame and put on the lid for few seconds so its well put together.
Now open the lid and dish it out in a bowl and garnish with remaining roasted almonds and coconut flakes as shown in the video. Your yummy kheer is ready. Enjoy.
