Tamil Food Explorer is back with Episode 111, and this time I visited Milkfish & Broth at Raffles City Shopping Centre to discover a restaurant that takes comforting seafood broths and grilled milkfish to another level! If you love fish soup, collagen broth, grilled fish, comforting Asian soups or discovering unique restaurants in Singapore, this is an episode you definitely need to watch. Milkfish & Broth is a homegrown Singapore dining concept specialising in hearty broths and grilled milkfish, with its Raffles City restaurant offering a modern take on the familiar comfort of fish soup. But instead of only going for the usual fish soup experience, I wanted to explore some of the restaurant's different broths, sides and, most importantly, their Grilled Milkfish Belly. And I can tell you right now — the milkfish was the star of this meal. For this episode of Tamil Food Explorer, I tried: Prawn Collagen Broth with Seafood & Batang Wild Mushroom & Kombu Broth Grilled Milkfish Belly in Miso Sauce Pork Rolls We started with the Prawn Collagen Broth with Seafood & Batang, a comforting bowl packed with seafood flavours. The rich broth together with the prawns, seafood and Batang fish makes this a great option for anyone who enjoys Singapore-style seafood soup but wants something a little different. There is something extremely satisfying about a warm bowl of seafood broth, especially when it has enough depth to be enjoyed on its own. If you're someone constantly searching for good fish soup in Singapore, this is definitely one dish worth checking out. Next was something completely different — the Wild Mushroom & Kombu Broth. Instead of relying on seafood or meat, this broth gets its character from mushroom and kombu, producing a lighter yet savoury flavour profile. It was interesting tasting this immediately after the seafood collagen broth because you get to experience two very different interpretations of what a comforting bowl of broth can be. But then came the dish that completely stole the show - The Grilled Milkfish Belly in Miso Sauce. THIS WAS OUTSTANDING! The milkfish was easily my favourite dish of the entire meal and, for me, one of those dishes that makes you immediately want another serving. Milkfish belly naturally has a rich texture, and grilling it gives the fish another dimension. Pair that with the savoury character of the miso sauce and you get a dish that is rich, satisfying and incredibly addictive. If you've never tried milkfish before, or you've only eaten it prepared in other styles, this could be an interesting introduction to it. We also tried their Pork Rolls, giving us something crispy and savoury alongside all the broths and grilled fish. Having a fried side like this works really well with the meal because it gives you a contrasting texture between spoonfuls of warm broth. Overall, I was seriously impressed with my experience at Milkfish & Broth. The concept works because you aren't limited to just one style of fish soup. You've got seafood-based broths, plant-based options, grilled milkfish and sides, making it possible to put together a pretty varied meal. Milkfish & Broth is located inside Raffles City Shopping Centre, making it especially convenient if you're around City Hall, Marina Bay, Bras Basah or Singapore's Civic District and looking for somewhere to have lunch or dinner.
