The day Opal Kessler stopped driving, she hung her keys on a nail and started eating saltines for supper. So my mother cleared one shelf in Opal's pantry and stocked it with twelve suppers that never needed a trip to town, each one bundled with a rubber band and a card.
I'm Della Prosser, and I still farm the same central Nebraska ground. Here's everything on Opal's shelf, checked against what the USDA, FDA and the agencies on aging say now.
On the shelf:
✓ Where to put a shelf so nobody has to climb
✓ Oatmeal for supper, and how shelf milk works
✓ Tuna and noodles, and the fish the FDA calls a best choice
✓ Hash and an egg, creamed beef on toast, chicken and rice
✓ The two clocks on every pantry shelf: low-acid vs high-acid cans
✓ Sunday dinner from cans, and stew with biscuit dumplings
✓ The canned ham trap almost nobody knows about
✓ Boxed macaroni "plus two cans"
✓ A peach cobbler for a bad day
Number one isn't on the shelf. It's what my mother did every Saturday when she came to "check" it.
This week: stock one low shelf with a few bundled suppers, for yourself or someone else.
Can't drive anymore, or worried about someone who can't? Eldercare Locator: 1-800-677-1116 or eldercare.acl.gov. They'll connect you with your local Area Agency on Aging for home-delivered meals and rides.
In the comments: What could you make for supper tonight without going to the store? If you gave up driving, or watched a parent do it, how did it go? Who would you check on like this?
Watch next: the recipe cards my mother wrote for Walt Hansen, the widower down our road who'd never cooked a meal.

If your doctor has you on a low-salt or special diet, follow their advice first. Throw out any can that's bulging, leaking or badly dented along the seam.
Until next time, keep your shelf low and your phone list close.
