Sushi was invented to stop fish rotting. It took 1,300 years to become the exact opposite of itself — and nobody ever changed the name. Let's dive into sushi history! In 12th-century Kyoto, a drunk street seller vomited into her tub of sushi, stirred it in with her hand, and went back to selling. The man who wrote it down wasn't shocked that she sold it. His point was that nobody would be able to tell. That's where this starts. Sushi began as a preservation method from the rivers of Southeast Asia — fish, salt, rice, and a year under a heavy stone — after which you threw the rice away. Ancient food of the working class, far away from the pristine aesthetic we recognize today. What happened next is the strangest sequence in food history: a thousand years of people deleting the one thing that made it work, piece by piece, until nothing of the original survived except the word on the menu. Along the way: why the first sushi in Japanese writing turns up in a tax code, rice preservation, why the most expensive fish on the menu was once insulted by comparing it to a cat, why Edo-period sushi was never raw, and why a portion of sushi is ten pieces for reasons that have nothing to do with food.
