How was sushi invented? It began as a way to keep fish: people packed salted fish in rice for months until it turned sour, then ate the fish and threw the rice away. Over centuries Japanese cooks ate it sooner and sooner, until in Edo (Tokyo) in the early 1800s they used vinegar instead of waiting, squeezed the rice by hand and sold nigiri as street fast food.
