It was six small things nobody stood next to you and showed you. And the last one is a debt: eleven days ago I promised you the pollo en salsa verde, and a promise in this kitchen gets paid. ⭐ THE 6 TRICKS 1. STOP BOILING IT. Chicken for shredding is POACHED at a whisper: cold water, 1/2 white onion, 4 garlic cloves, 2 bay leaves, 1 Tbsp salt. Up slowly, skim the foam, then down until the pot barely trembles (page 138: time does the work, not violence). A hard boil rattles the meat to rags. And the water is now BROTH, tomorrow's rice. 2. SALT WATER FIRST. 4 cups cold water, 2 Tbsp salt, dissolved. Chicken in 30 minutes to 2 hours, in the refrigerator, never overnight. The salt moves into the meat so it HOLDS its own water when the heat comes. 3. NOT COLD, NOT WET. 30 minutes on the counter, then pat it BONE DRY, both sides. Wet chicken steams gray. Dry meat browns. Same law as the carne asada. 4. THE BREAST AND THE THIGH ARE NOT THE SAME MEAT (page 197). Breast = fast, hot pan, out EARLY, rested. Thigh = fat, collagen, forgiving, where the flavor lives, and HALF the price. Buy the thighs. 5. THE NUMBER, AND THE REST. Safe at 165°F, checked in the thickest part of the THIGH (page 192). Carryover is real: off at 160, 5 minutes under a towel, it ARRIVES at 165. Cooked to 165 in the pan, it arrives at 175, sawdust. An $8 thermometer is the cheapest piece of chicken you will ever buy. 6. ⭐ POLLO EN SALSA VERDE, the promise paid (about 20 minutes, serves 4 to 6) Page 148: one protein + one salsa = the dish. One move, repeated. • 6 to 8 boneless chicken thighs, out of the salt water, patted dry • 1 Tbsp manteca or oil • 2 cups salsa verde (the jar from the salsa verde video; I told you to make extra, this is why) • To serve: warm tortillas, crumbled queso fresco, or the rice made with the poaching broth Wide pan, fat hot until it shimmers. Whisper the pot, give it the 30 minutes. • Dry → cooked to the number in the pan and kept going. Off at 160, 5 minutes under a towel. • Pale and gray → wet meat or a shy pan. Bone dry, pan hot enough to scare you. • Bland → the salt never had its head start. Salt on the outside seasons the crust. Salt water seasons the middle. WHO PROFITS: the pre-marinated tray at three times the price, because they know you do not know about salt water. The seasoning packet sold to cover the taste of boiled chicken. And page 137: a whole chicken costs less per kilo than any part sold separately. They charge you for the cutting. THE HABIT: the chicken goes into the salt water BEFORE it goes into the refrigerator, the day it comes home. Freezing it? A little brine in the bag, flat, and it thaws already seasoned.
