Learn how to cook frozen chicken thighs in the Instant Pot so they turn out juicy, flavorful and fork-tender—no thawing required! This easy method works with both bone-in and boneless chicken thighs and makes a delicious comfort food dinner. For 2–4 frozen chicken thighs that fit in a single layer, make a seasoning paste with: • 2 tablespoons olive oil • 1 teaspoon garlic powder • 1 teaspoon onion powder • 1 teaspoon paprika • ½ teaspoon salt • ½ teaspoon Italian seasoning • ¼ teaspoon black pepper Spread the paste over the frozen chicken. Pour 1½ cups chicken broth or water into the Instant Pot, add the trivet and place the chicken on top, skin-side up if applicable. Cooking times: • Boneless frozen chicken thighs: 12 minutes on High Pressure • Bone-in frozen chicken thighs: 15 minutes on High Pressure • Allow a 5-minute natural release, then release the remaining pressure. • Check that each thigh reaches at least 165°F in the thickest part, away from the bone. If needed, cook longer and check again. Don’t discard the seasoned cooking liquid! Spoon those flavorful drippings over the chicken before serving for an easy finishing touch. Taste and add more salt if needed. Serve over rice, pair with mashed potatoes and vegetables or shred the meat for tacos, burrito bowls and quesadillas.
