Can you cook chicken thighs and rice together in the Instant Pot? Yes! This easy Instant Pot chicken thighs and rice recipe gives you juicy bone-in chicken and fluffy white rice, both cooked at the same time. The trick is cooking the rice in a covered bowl above the chicken. The pot-in-pot method keeps the rice from absorbing chicken grease or extra liquid, so it stays separate and fluffy. Use two very large chicken thighs or three to four smaller thighs that fit in a single layer. My favorite 6-inch round pan for the pot-in-pot method: https://amzn.to/4AwLghq This recipe uses fully thawed chicken. Looking for frozen chicken thighs? Combine seasonings and rub over chicken. Pour broth into a 6-quart Instant Pot. Add a low trivet and arrange chicken skin-side up in one layer. Add rice, water, salt and butter to a 7-cup pressure-safe bowl. Cover tightly with foil. Set the bowl securely on top of the chicken, staying below the max-fill line. Cook on HIGH pressure for 8 minutes. Natural release for 10 minutes, then release remaining pressure. Remove the rice bowl and let it sit, covered, for 5 minutes. Check the chicken near the bone. It must reach at least 165°F. If needed, remove the rice and cook chicken 2 minutes longer. Fluff the rice. For crispy skin, broil chicken for 2–3 minutes. Use regular long-grain white or basmati rice. Do not use instant, brown or parboiled rice.
