Whenever you glance up, something will have moved along: a fresh batch of nuts goes onto the rack, the smoke rises, the lids go on, and little bags start to fill up. You know that cozy feeling of hearing someone cooking in a kitchen down the hall? Not right next to you, just a little way off. A lid clinks, a bag rustles, a burner clicks on. That's the distance I kept for the sound in this video. Just someone quietly making something nearby, while you get your own work done. I evened out the volume, so no sudden loud sounds will startle you. ――― 🌿 What you'll hear ・The river by the smokehouse ・Foil, apple wood chips, and mixed nuts poured onto the rack ・Gas burners, smoke, and lids going on, batch after batch ・Paper towels pressed onto the warm nuts to soak up the moisture ・Nuts scooped into bags, weighed one by one, and sealed with the vacuum sealer 🔥 A small thing I always do After smoking, I press paper towels onto the nuts to take off as much moisture as I can. If moisture stays on the nuts, they turn a little sour.
