Married, But This Entire Day Belongs to Me | 60 Days for One Jar of Umeboshi, Tokyo

My husband and I keep completely different schedules — he's out at work all day, most days. We rarely share a day, and we're good. He has his day; I have mine. Today, this is what mine looks like. In mid-June I salted the last ripe plums of the season. I sun-dried them in early July when the rainy season lifted, packed them in red shiso, and left them for a month. Today — sixty days later — they're finally ready. This is my fourth year making umeboshi, but the first time using shiso. I learned it from a plum farmer's YouTube channel, so some of my steps are probably wrong. I'd still rather try first. Even a failure becomes my own data, my own experience. The real failure is doing nothing at all — I know that because I once stayed far too long in a job that was breaking me, and once restricted my food so severely that I feared growing old without ever eating what I loved.
