Soft Aloo Paratha Recipe
Ingredients
For the Dough
2 cups wheat flour (atta)
½ teaspoon ajwain (carom seeds)
Salt, to taste
1 tablespoon ghee
Water, as needed, to knead the dough
For the Aloo Filling
4–5 boiled potatoes
Salt, to taste
1–2 tablespoons mustard oil
5–6 garlic cloves
1 medium onion, finely chopped
1–2 green chillies, finely chopped
½ teaspoon garam masala
1 teaspoon Kasuri methi
Ghee, for cooking the parathas
Method
1. Prepare the dough: In a large bowl, combine wheat flour, ajwain, salt, and ghee. Rub everything together well. Gradually add water and knead into a soft, smooth dough. Cover and let it rest for 15–20 minutes.
2. Prepare the potatoes: Peel the boiled potatoes and mash them well. Add a little salt and mix.
3.Fry the garlic: Heat mustard oil in a pan. Add the garlic cloves and fry until lightly golden and aromatic. Remove the garlic, mash it, and keep it aside.
4.Cook the filling: In the same pan, add chopped onion and green chillies. Sauté until the onion turns lightly golden.
5.Add the mashed potatoes and mix well. Cook for a few minutes, stirring occasionally.
6.Add the mashed fried garlic, Kitchen King masala or garam masala, and Kasuri methi. Mix thoroughly and cook for another 2–3 minutes.
Transfer the filling to a plate and let it cool slightly.
7.Stuff the parathas: Divide the dough into equal-sized balls. Roll one ball out slightly, place some potato filling in the centre, and bring the edges together to seal it completely.
8.Gently roll the stuffed dough into a round paratha. Avoid pressing too hard so the filling stays inside.
9.Cook the paratha: Heat a tawa over medium heat. Place the paratha on the hot tawa and cook on both sides. Apply a little ghee and cook until golden spots appear and the paratha is completely cooked.
Repeat with the remaining dough and filling.
Serve: Serve the hot, soft aloo parathas with dahi (curd) and pickle.
