Khichdi Chokha Chutney | Traditional Saturday Special Meal | Easy & Authentic Recipe

KHICHDI
Ingredients:
1 cup mota arwa rice, ½ cup toor dal, ¼ cup moong dal, 2 potatoes, 3 cups water, salt & turmeric.
Method:
Wash rice and dals well. Add to a pressure cooker with water, salt, turmeric and potatoes. Cook for just 1 whistle. If using regular/thin rice, cook for about 5 minutes without a whistle. If the khichdi is too thick, add hot water to adjust the consistency.
Tadka: Heat 2 tbsp mustard oil. Add 1 tsp cumin, chopped garlic, a pinch of hing, 2 dried red chillies and 1 small bay leaf. Once aromatic, add 1 tbsp finely chopped onion and sauté lightly. Pour over the hot khichdi.
🍆 ALOO–BAINGAN–TOMATO CHOKHA
Ingredients:
2 boiled potatoes (cooked with the khichdi), 1 eggplant, 2 tomatoes, 1–2 green chillies, salt, coriander leaves & mustard oil.
Method:
Rub mustard oil over the eggplant and tomatoes and roast directly over the flame until completely cooked and charred. Peel and mash them with the boiled potatoes and chopped green chillies. Add mustard oil, salt and fresh coriander. Mix well. Chokha is ready!
🌿GREEN CHUTNEY
Ingredients:
Coriander leaves, 2–3 garlic cloves, green chillies, 1 tsp sev bhujia, 1 tsp roasted cumin powder, black salt, salt, a pinch of sugar & raw mustard oil.
Method:
Grind everything except the mustard oil until smooth/coarse as preferred. Add a little raw mustard oil at the end and mix well. Chutney is ready!
