Fifteen dollars at the line, the rice already soggy, half your chicken shaken back into the pan. A burrito bowl is two opposite jobs: the chicken wants FIRE and a night in its marinade, the rice wants PEACE. Here is the whole bowl at home for about three dollars, and at the end, the order my mother built a plate in so nothing ever gets soggy. ⭐ THE CHICKEN (marinate the night before) • 2 lb chicken THIGHS • 1 small can chipotle peppers in adobo: 4 peppers + all the sauce • 4 garlic cloves, 1 tsp cumin, 1 tsp dried Mexican oregano, 1 tbsp chile powder • 2 tsp salt, 1 tsp black pepper, 2 tbsp oil, 3/4 cup water Blend smooth, bag it with the thighs, air out, refrigerator overnight. Cast iron, medium high, 4 to 5 minutes until charred dark red brown, flip, about 3 minutes more. 165°F (book page 192). Rest 5 minutes, chop. ⭐ CILANTRO LIME RICE • 1 cup long grain rice, rinsed and drained DRY • 1 tbsp oil, 1 bay leaf, 1 3/4 cups hot water, 1 tsp salt • Juice of 1 lime and a handful of cilantro, AFTER cooking Stir the rice in the oil with the bay leaf 2 minutes until milky white. Water and salt, ONE stir, simmer, lid on, lowest heat, 18 minutes. Heat off, lid on, 10 more. Lime and cilantro, fluff with a fork. ⭐ BEANS: black or pinto from your Sunday pot, warmed in a little of their broth with a pinch of cumin (salt at the start, book page 92; done when five in a row are creamy, page 94). ⭐ PICO DE GALLO (page 124): 3 parts tomato to 1 part white onion, serrano, cilantro, lime, salt. Rest 10 minutes. ⭐ GUACAMOLE (page 338): 3 ripe avocados mashed COARSE with a fork, minced onion, serrano, cilantro, lime, salt. No tomato. Plastic pressed on the surface keeps it green. The pit is a story. ⭐ THE ORDER (the reason the line's bowl is soggy) Two halves. WARM side: rice, then beans, then chicken on the beans. COLD side: lettuce, pico, cheese, crema, guacamole. Salsa on the chicken, never the rice. For lunches, the cold things go in their own container. THE HONEST WORDS: • Dry chicken → it was breast, or it went far past 165. • No char → pan not hot, or crowded. • Mushy rice → too much water, or the lid came up. • Flat → more salt, more lime. WHO PROFITS: the bowl at the line with guacamole is $14 to $15. The whole batch here is about $18 and makes SIX bowls, about $3 each. THE HABIT: Sunday the beans go on and the chicken goes into the marinade. Monday bowls, Tuesday tacos, Wednesday quesadillas, Thursday lunch bowls. And the blender stained red from the chipotle?
