What exactly is a Pacific Ale – and should it be hazy or clear? In this Grain to Glass brew day at Wheatlow Brewery, I'm having a go at this wonderfully drinkable Australian-inspired beer style: a light, refreshing 4% Pacific Ale designed to put the hops firmly centre stage. The recipe was inspired by Flamin Galah Brewing Co.'s Pacific Ale, but naturally I've ended up putting a bit of a Wheatlow – and perhaps rather British – spin on it! ‪@flamingalahbrewingco‬ watch the flamin Galah brewday video here:    • Brewing Our Award Winning Pacific Ale - Pa...   The malt bill is deliberately simple, using Weyermann Pilsner malt and wheat malt to create a pale, delicate base for the hops. Galaxy goes into the whirlpool, followed by a dry hop of Citra, Mosaic and experimental Australian hop HPA-429. Fermentation is with SafAle S-04, giving us a reliable, fruity English ale fermentation. The result is a beautifully refreshing beer packed with tropical and stone-fruit hop character, gentle bitterness and a surprisingly good creamy head. There's just one slight problem… It's absolutely crystal clear! Flamin Galah's version is hazy, so have I accidentally created an Anglicised Pacific Ale? And does a Pacific Ale actually need to be hazy? We try the finished Tripe Hound Pacific Ale both from the cask and keg and compare the two versions. Let me know in the comments: Should Pacific Ale be hazy or can it be clear? Would you use wheat, oats or both? And which Australian or New Zealand hops would you choose? 🍺 TRIPE HOUND – Pacific Ale – 4% ABV Malt: Weyermann Pilsner Malt – 87.4% Wheat Malt – 12.6% Hops: Saaz – small bittering addition Galaxy – whirlpool at 85°C Citra – dry hop Mosaic – dry hop HPA-429 – dry hop Yeast: SafAle S-04 From grain to glass – brewed, fermented, casked, kegged and finally tasted here at Wheatlow Brewery.
