Craffins recipe:
Dough:
650–700 g flour
12 g dry yeast
200 ml warm milk
2 eggs (size L)
3 egg yolks
120 g sugar
a pinch of salt
30 g honey
50 ml orange juice
vanilla
zest of 1 lemon
zest of 1 orange
80 g softened butter
Filling:
candied fruit or dried fruit (cranberries, cherries, raisins, figs, to taste)
butter (about 70–100 g) for layering
Chocolate, if desired
Preparation:
1. Starter: Warm the milk slightly (to 35°C), add the yeast and 1 tablespoon of the total sugar, then stir. Cover with plastic wrap and let sit for 10 minutes
2. Meanwhile, beat the eggs, egg yolks, sugar, and salt until fluffy
3. Add the orange juice, starter, honey, zest, vanilla, and 2/3 of the flour. Mix until smooth (I used a dough hook attachment on my mixer)
4. Add the warm butter a little at a time, and once it’s incorporated into the dough, add the remaining flour. Depending on the flour’s quality, you may need more or less. At this stage, I kneaded by hand; the dough needs to be kneaded very well to develop the gluten. I kneaded for about 10 minutes. The dough will be soft and elastic and will no longer stick to your hands or the surface (I used 650 g of flour + 50 g). It’s important not to overwork the dough with flour, but to knead it patiently
5. Transfer the dough to a bowl and set it aside in a warm place for an hour
6. Divide the dough into several rolls, cover with plastic wrap, and let rest for 5–10 minutes.
7. Roll out the dough very, very thinly.
8. Brush with softened/melted butter, sprinkle with filling, and roll up as shown in the video.
9. Cut lengthwise, but not all the way through on one side. Roll into a spiral as shown in the video
10. Place in a baking pan and let rise in a warm place for an hour
11. Bake at 160°C for about 30–40 minutes until done; check with a toothpick
Store the kaffins at room temperature in an airtight container for up to 5 days.
