Hello Lovely People,
This is my first cooking video which doesn't require much cooking at all. A quick no bake sweet, and simple snack idea, stuffed dates with tart and glace cherries dipped in melted chocolate and rolled in shredded coconut.

COCONUT CHOCOLATE CHERRY ALMOND STUFFED DATES
INGREDIENTS (Metric measurement) – Makes 15 stuffed dates
40g desiccated coconut (for stuffing)
210g desiccated coconut for sprinkling
10 glace cherries seedless
100g tart cherries seedless (preferably Dr Superfoods dried Montmorency
tart cherries brand, they are sweet and moist)
2tbs water (optional, helps blend ingredients)
15 raw almonds
275g dark cooking chocolate
15 Medium to large Medjool dates deseeded (good quality)
1. For the stuffing place 40g desiccated coconut, 10 glace cherries, 100g
tart cherries and 2tbs of water into a blender. Pulse until
blended, empty onto a plate and place aside. If you do not own a
blender mince glace and tart cherries with a knife and mix in coconut
and water. The water is used to help blend the ingredients it is not
necessary.
2. Cut the dates slightly open and remove seeds.
3. Place some stuffing and 1 almond in each date then close the date.
4. Place some baking paper on a flat tray and pour about 210g desiccated
coconut on it.
5. Melt the cooking chocolate (follow instructions on packet)
6. Dip each date in melted chocolate then place on the tray lined with
coconut and sprinkle coconut on top.
7. Place the tray in the fridge for 20 mins to set the chocolate. Keep the stuffed
dates in the fridge, they never last longer than 3 days in my household
as they get eaten up pretty quickly.
8. Enjoy - hope you like them
Brands I used which are optional :
Cadbury Melts – Real Dark Chocolate or (Nestle baker’s choice dark choc bits is good also)
Dr Superfoods Dried Tart Montmorency Cherries (online)
Win cherries red glace
Golden Palm Medjool dates premium quality
McKenzie’s coconut fine desiccated 250g packet

This is my first video with a DSLR, hopefully with practice my filming and editing skills will improve.
Wishing you a great day! :)
