It was compiled for the household of Richard the Second, and it records what was actually served at the top of English society. Among the roasted swans and the spiced sauces sits a recipe for boiled cracked wheat. Not as a curiosity. As one of the standard dishes of the house. And the same boiled cracked wheat, made the same way, was being eaten that year by a plowman who would never see a king. One dish, at both ends of a society that agreed on nothing else. It stayed there for roughly six hundred years. Then, inside about two generations, it disappeared so completely that the word for it went too. Tonight we work out what happened to frumenty. What the dish actually was, why the same pot fed a laborer and a monarch at the same moment, and why something that universal can vanish without anybody arguing about it. Nobody decided to stop making this.
