સુરતી ખરખરીયા દિવાળી માટે બનાવવાની પરફેક્ટ માપ સાથે ની રીત મનીષાબેન દેસાઈ દ્વારા | Surti Kharkhariya
Friends, today I'm sharing the authentic recipe for Surti Kharkhariya (સુરતી ખડખડિયા)! Kharkhariya is a unique and traditional festive sweet delicacy originating from the rich culinary heritage of Surat, South Gujarat. Named "Kharkhariya" after the distinct rustling or crackling sound ("kharkhar") these delicate, thin, papery sweet puris make when handled, this dish is traditionally prepared during auspicious occasions and festive seasons like Diwali and Holi. The secret behind its uniquely light, crisp, and layered texture lies in the traditional technique of hammering the dough using a stone or wooden block to develop gluten elasticity, rolling them semi-transparent, and drying them on a plastic sheet before slow frying. It is delicious and can easily be stored for up to a month in an airtight jar!

Ingredients
• 150 grams (1 cup) All Purpose Flour, मैदा
• 5 tbsp Sugar, चीनी (Dissolved in normal water for 3 hours)
• 2 tbsp White Sesame, सफ़ेद तिल (Dissolved in Normal Water for 2 hours)
• 4 tbsp Pure Ghee, शुध्ध घी
• 7 tbsp Milk, दूध
Step-by-Step Method
1. Prepare Inclusions: Dissolve 5 tbsp sugar (चीनी) in normal water for 3 hours. Soak 2 tbsp white sesame (सफ़ेद तिल) in normal water for 2 hours. Drain the excess water from the white sesame before using.
2. Prepare Dough Base: In a large bowl, take 150 grams all purpose flour (मैदा). Add 2–3 tbsp pure ghee (शुध्ध घी), drained soaked white sesame, and the dissolved sugar water. Mix everything well with your hands.
3. Knead & Hammer Dough: Pour 6–7 tbsp milk (दूध) into the flour mixture and knead into a soft dough. Using a heavy stone or wooden hand block, hammer this dough continuously for 5 minutes, changing sides frequently to make it smooth and pliable.
4. Resting the Dough: Cover the kneaded dough with a water-soaked wet cloth to keep it moist throughout the process.
5. Roll Puris: Take a small, handful portion of dough (keep the remaining dough wrapped in the wet cloth). Make small balls and roll them out into small, thin, semi-transparent puris.
6. Drying Process: Spread all the rolled puris evenly onto a plastic sheet and allow them to rest/dry for 2 hours.
7. Frying: After 2 hours, heat ghee/oil in a pan over low to medium flame. Fry the puris in small batches until they slightly change color to a beautiful light brown.
8. Storage: Take them out and let them cool completely. Your crisp, delicious Surti Kharkhariya is ready! Store in an airtight jar for up to a month.
