Don’t throw away overripe plantains! Turn them into soft, moist Caribbean-style plantain bread with cinnamon, nutmeg, lime zest, coconut, raisins and cherries. A delicious homemade loaf for breakfast or with coffee or tea.
INGREDIENTS
• 2 large very ripe plantains
• 1 cup sugar
• 2 eggs
• ½ cup (1 stick) melted butter
• 1¾ cups all-purpose flour
• 2 tsp baking powder
• ½ tsp baking soda
• ¼ cup milk (listed in original recipe; not shown in SRT)
• ½ tsp salt
• 1 tbsp freshly grated lime zest (per video subtitles)
• 1 tsp vanilla essence (per video subtitles)
• 1 tsp cinnamon
• ½ tsp nutmeg
• ¼ cup coconut (per video subtitles)
• ¼ cup raisins and ¼ cup cherries or nuts (optional, per subtitles)
METHOD
Mash the ripe plantains. Mix with melted butter, eggs, lime zest, vanilla and sugar. Sift in flour, spices, salt and raising agents; fold gently. Add coconut and optional fruit or nuts. Pour into a greased 9 × 5-inch loaf pan. Bake at 350°F (175°C) for approximately 45–50 minutes. Check the center and cool in the pan for 10 minutes before transferring to a rack.
