Traditional Gujarati Patra made with Arbi Leaves (Colocasia Leaves / Alu chi Paan) 🌿 Ingredients Makes 10 Rolls 30 Arbi Leaves 2 Cups Besan 2 Cups Rice Flour 1 Cup Curd 3 TBSP Oil 2 TBSP Green Chilli Paste 1½ TBSP Ginger Paste 1 TBSP Ajwain 1½ TBSP Salt 1 TBSP Turmeric Powder 1½ TBSP Coriander Powder 1 TBSP Garam Masala ½ TBSP Crushed Black Pepper 5 TBSP Sugar Approximately 1 Glass Water, as required to make the batter Note: The spices may seem slightly more than usual, but these quantities are balanced for the final taste of Patra. Taste the batter and adjust seasoning as needed. Storage: Freeze for up to 1 week. Reheat & enjoy. ❄️ For Tempering Groundnut Oil Mustard Seeds (Rai) Thick Mild Green Chillies, chopped (optional) Curry Leaves Sesame Seeds For Garnishing Fresh Coriander ,Grated Fresh Coconut & poppy seeds (optional) Method Prepare a smooth batter using all the ingredients. Coat the Arbi leaves evenly with the batter, roll them tightly and steam until cooked. Allow the rolls to cool completely, then cut into pieces. 3 Ways to Enjoy Patra 1. Steamed Patra Cut the freshly steamed rolls and enjoy them hot with a drizzle of groundnut oil. 2. Tempered Patra Cool the rolls completely, cut them into pieces and add the traditional tempering of groundnut oil, mustard seeds, curry leaves, sesame seeds and optional mild green chillies. These can also be stored in the refrigerator and enjoyed later. 3. Crispy Fried Patra Keep the steamed rolls refrigerated overnight. Cut them the next day and deep-fry until crispy.
