Let's make some rustic Japanese rice wine called doburoku -- a farm-style sake. I found this recipe on oryzaewonderland.com, created by Yoshito Maeoka, a Japanese brewer in Germany! This particular recipe is a single-stage brew using koji and baker's yeast. His website is in German and Japanese, and both versions translate well to English, with many photos. So, reiswein selbst brauen! (I don't know German, but I like typing the word selbst for some reason.) Where to buy this koji: https://amzn.to/2OMdM9l As an Amazon Associate, I earn from qualified purchases.
