Hi Friends, This is a variation of an Indian Bhindi Masala, or Okra Curry recipe. I tried okra for the first time around a year ago - and it definitely is one of my favourite veggies, because of its unusual texture, tacky juice - and its affordability here, in Dubai. You might find it harder to find fresh okra in more Northern climates, but if you have a chance to try it - you won't regret it! For this recipe, I am using a Nutricook (Instant Pot kind of) - and it takes only some sauteing and 2 minutes on a low pressure setting - to be done with this delicious recipe 🌱 Timestamps: 00:00 Intro 00:37 What's Okra - Some Info 01:24 Ingredient Rundown 02:39 Our Batches 03:49 Spice Mix 04:51 Instant Pot is ON! 07:29 The Final One 💛 INGREDIENTS: 1️⃣Batch 1 tbsp Cumin seeds - we'll start with this spice 1 tbsp oil (or water if you prefer to avoid 2️⃣Batch Onion, garlic, 2 green chillies - all minced 3️⃣Spice Batch 🔥 0.5 tsp Turmeric Powder 1 tsp Coriander Powder 1 tsp Red Chilli Powder 4️⃣Batch 1-2 ripe tomatoes or 1 can of diced tomatoes 200-300g fresh okra - washed and chopped into 2-3 cm pieces 5️⃣Batch 0.5 lime juice or 1 tbsp of vinegar METHOD: Easy-peasy We start with a saute mode. Wait till the pot heats up. Add 1️⃣- first oil, then the seeds, and let them crackle a little, it lets the oil get infused with the goodness of the seeds. ⏩add 2️⃣saute for 1 minute ⏩add 3️⃣ - the rest of our spices and mix well ⏩add 4️⃣, mix well ⏩add 5️⃣ Saute mode off! Close the lid - turn to the sealing mode. LOW Pressure for 2 minutes, thenn QUICK release - and you are done with a beautiful okra curry! COOKING HACKS: ⭐️Prep all the ingredients before you turn you instant pot on - saute mode burns things pretty fast! ⭐️Allow the instant pot to heat up before you add oil to the surface - we want to minimize its contact with the heated surface ⭐️Using olive oil, use lighter oil for cooking & leave more flavourful, heavier oil for salads ⭐️For acidity purposes, you can replace lime with vinegar(s) or lemon ⭐️ If you use citrus fruits, keep them for the end of a cooking process, so they preserve their benefits (vitamin C breaks down with heat) Thank you for watching!
