Pindi Chole Recipe Overview Ingredients For Boiling the Chickpeas: Kabuli Chana (Chickpeas): 1½ cup (soaked overnight) Tea Leaves or Black Tea Bag: 1 tsp (or 1 tea bag) Baking Soda: ¼ tsp (helps soften the chickpeas completely) Whole Spices (Potli): 2 Tej Patta 1 cardamom, 2-3 green cardamoms, 1 small cinnamon stick, 2 cloves, Salt: 1 tsp Water: 4 cups give 7 to 8 wristles For Tadka Oil & Ghee: 2 -3 tbsp each 1 tspn Ajwain 2 tspn Red chilli powder 2 tspn Dhuniya Powder ½ tspn Haldi 1 tbsp Anardana 2 tspn Chole Masala Onion: 2 large (finely chopped or ground to a paste) Tomato Puree: 4 medium tomatoes Ginger-Garlic-Green Chili Paste. 1 tbsp Ginger Juliennes & Slit Green Chilies: For the final decoration. Method: Heat 3 tablespoon of oil and 1 tablespoon of ghee in a heavy-bottomed pan or an iron kadhai (using cast iron darkens the color beautifully). Add 1 Tspn Ajwain and the onion paste and saute until golden brown. Stir in the ginger-garlic-green chili paste and fry for another minute. Dry masala (Haldi, Dhuniya Powder, Chilli powder and salt) Pour in the fresh tomato puree. Cook covered over medium heat until the raw aroma disappears and the oil completely separates from the sides. Turn the heat to low, add your freshly ground spice blend, and mix well for 30 seconds. Simmer the Chole Add the boiled chickpeas to the masala base and stir well to coat them evenly. Pour in about ½ to 1 cup of the reserved dark chickpea water. Use the back of your ladle to mash a few chickpeas against the side of the pan—this naturally thickens the gravy and yields a luxurious texture. Cover and simmer on low heat for 10-12 minutes until the chole turns thick, rich, and dark Serve Hot with Bhature. #viralvideo #cooking #viral #trending #chess #feed #feedshorts #fypシ
